Ingredients for Chana Jor Garam
- Chana- 1 cup (200 gms)
- Salt- 2 tsp or as per the taste
- Black salt- ½ tsp or as per the taste.
- Roasted cumin seeds- 1 tsp
- Red chilli powder- 1 tsp
- Garam masala- ½ tsp
- Mango powder- 3 tsp
- Oil- for frying
How to make Chana Jor Garam
Soak the black chanas after cleaning and washing them properly for the 7 hours. Remove the extra water from the chanas and put them in the pressure cooker along with the 1 cup of water to boil. Switch off the whistle as the single whistle arrives. Open the pressure cooker when the pressure of cooker exhausts and remove the remaining water from the pressure cooker. Again wash the chanas using the fresh water and strain the water out of them.
Next step involves the flattening of the chanas by applying pressure on them. Pick the chanas one by one, place them on the board and flatten them putting pressure over them. After flattening them place them on the plate. You can even flatten the 4-5 chanas by putting pressure over them using a bowl or some other object. Dry all the chanas after flattening them.
You can dry the chanas in the sunlight or beneath the fan. If you are drying them in the sunlight then they will take the time duration of ½ day to dry whereas, when it comes to under the fan it takes almost a whole day to dry.
For the masala preparation
Take a mixer jar and add salt, black salt, red chilli powder,garam masala powder and mango powder and mix them in the mixer jar. Take all the masala mixture in a bowl after mixing.
For frying the chanas
Once, the chanas dry fry the chanas in the wok. Preheat the oil in the wok and
check the temperature by adding single chana in the oil. As the chana fries, it will start floating on the surface of the oil. Fry the chanas on medium flame and oil should be moderately heated.
Use a strainer to fry the chanas, place the strainer in the wok and put the chanas in it. Chanas are already dry so they get fried easily and quickly. Fry the chanas for almost 15-20 seconds. Chanas are fried and ready, place them on the plate.
Add the 2 tbsp of masala mixture over the chanas and chanas are ready.
For baking the chanas
For the baking process, a wok is required with the heavy bottom. Spread the salt in the wok and preheat it. Place a stand on the wok and cover the wok and switch the flame to high.
Place the plate of chanas on the stand in the wok once it heated up. Cover the wok and bake the chanas for 7 minutes on the high flame.
Check the chanas after the 7 minutes, they will be baked and ready. Remove the chana jor garam’s plate from the wok and keep it aside. Mix some more masala mixture in the chanas.
Store the prepared chana jor garams in an air-tight container and consume them for the period of 2-3 months. You can serve the chana jor garam with the evening tea as a snack.
Suggestions
Black chanas should be larger in size and of light black colour.
Do not make the softer chanas, cook them until single whistle arrives.
Do not fry the chanas more than the 15-20 seconds otherwise, they will burn.
You can bake the chanas in the microwave also.
