Paneer Khurma is a paneer based sweets recipe from Bihar. This sweet is also known as Belgrami. The traditional way of preparing this sweet consumes too much time, so let's prepare it in short order.

Ingredients for Paneer Khurma

Paneer - 200 gms
Water - 1.25 cups
Sugar - 3/4 Cup

Paneer khurma Recipe

We will start with sugar syrup preparation. Add 3/4 cup of sugar and 1.25 cups of water to the cooker. Boil the water till the sugar dissolves completely.

Take 200 grams of paneer and cut into cubes. Add paneer cubes to the syrup once the sugar dissolves completely, and you can see a nice boil in the syrup.

Drop paneer cubes one at a time without interrupting the boil in the syrup. Close the cooker lid and pressure cook the paneer over high heat for a few minutes.

After a whistle, cook the paneer cubes for 30 minutes over low heat.

Open the cooker lid after 30 minutes, and you will see nice golden brown color paneer cubes. The paneer cubes are well-cooked, but we need to thicken the syrup.

Simmer the syrups with paneer cubes over medium heat without covering.

After 7-8 minutes, you will see the syrup has thickened. Allow the syrup to cool before taking the cubes out.

After 5 minutes, transfer the paneer cubes to a sieve with a bowl underneath. Leave the cubes in the sieve for an hour or two.

After 2 hours, transfer the paneer khurma to the serving plate and use drained out syrup for preparing shakkarpara, meethi mathari, meetha cheela, or pua.

Paneer khurrma is ready to be served. Store the khurma in any container, refrigerator, and enjoy them for 15 days.
