Atta Dry Fruits Laddu | Winter Special Punjabi Pinni
Punjabi Pinni is a sweet which is very famous in the regions of Punjab.
Ingredients for Punjabi Pinni
- Wheat Flour - 2 cups (300 gms)
- Tagar - 2 cups (300 gms)
- Ghee - 1.25 cups (300 gms)
- Almonds - ½ cup (75 gms)
- Cashew Nuts - ½ cup (75 gms)
- Dry coconuts - ½ cup (50 gms)
- Muskmelon Seeds - ½ cup (50 gms)
- Edible Gums - ¼ cup (50 gms)
- Green Cardamom Powder - 1 Tsp
How to make Punjabi Pinni
Take ½ cup of Clarified Butter in a wok and melt it in the wok. Moderately heated Clarified Butter is required to roast Edible Gum. Add ¼ cup of Edible Gum in the wok and roast on the low - medium flame for 3 minutes until they are Golden Brown. Drain them out after roasting
Add ½ cup of Almonds in the wok and roast them on the medium flame for 2 minutes until they expand and colour changes. Drain them out after roasting. Add ½ cup of Cashews in the wok and roast them on the medium flame until they are light Brown. Drain them out after roasting
Dry roast ½ cup of Muskmelon Seeds until they expand and their colour changes on the high flame for 2 minutes. Roast ½ cup of the grated dry coconut while continuously stirring it for a minute.
Filter the heated clarified butter using a strainer and add ½ cup more clarified butter in it. Take 2 cups of Wheat Flour and roast on the medium flame while continuously stirring it until Golden Brown for 15 minutes. Switch off the flame when the fragrance is soothing and stir it for a while.
Coarsely grind the roasted Edible Gumin the Mortar along with roasted Cashews, roasted Almonds and mix them. Add the crushed coconut in it, roasted muskmelon seeds and mix all the Ingredients when they are hot. Add 2 cups of Tagar and mix all the Ingredients.
Add Clarified Butter along with 1 teaspoon of Cardamom Powder and mix them. The mixture is ready for the Pinni.
Lift some mixture and bind it into the round shaped ball. Place a piece of Cashew over it and bind it. Prepare all the Pinnis in the same way. You can make 25 Pinnis out of the prepared mixture. Store them in a container and consume for the 2-3 months.
Do not fry edible gum on the high flame otherwise, they will roast from the upper side and stay raw from the inside.
You can increase or decrease the quantity of Muskmelon Seeds and Tagar according to your taste.
If the mixture appears dry then, mix the melted clarified butter in it. If it appears wet then, leave it in the open air for a while.
