Process of making Stuffed Tinda

Wash and peel the 8 apple gourd well and then wash them again and wipe with a cloth.  Now put 1 tbsp of oil in the pan and heat it.  Put 1/2 tsp of cumin seeds and 1/2 pinch asafoetida in hot oil and lower the flame.  Fry them lightly.

Then add tomato-green chilli-ginger (1 tomato, 1 green chilli and 1/2 inch ginger) paste, 1/2 tsp of turmeric powder, 1.5 tsp of coriander powder, 1.5 tsp of fennel powder and 1 tsp of kashmiri red chilli powder.  Fry them on medium flame and mix them well.

When lightly roasted, add 1 tbsp of crushed dry fenugreek leaves to it.  Mix them well, add 1/4 tsp of amchur powder and 1/4 tsp of garam masala and 3/4 tsp of salt and mix it well and turn off the flame.

Take out the masala on a plate and let it cool down.  When the spices cool down, take an apple gourd  and cut it with a cross, leaving a little from the bottom.  Then fill it with spices all around.  Similarly, cut the rest of the apple gourds and fill the stuffing.

Now put 2 tbsp of oil in the pan and heat it.  Spread the oil evenly in the pan and keep the apple gourd in it for roasting.  Cover them and cook on low flame for 3-4 minutes.  When the time is over, flip them, cover them back and cook for 3-4 minutes.  Similarly, flip and fry apple gourd by covering and cooking from all sides.

When roasted well from all sides, add the remaining masala and 2-3 tbsp of water.  Mix them well and cover it back and cook for 4-5 minutes.  After 5 minutes, cook them open till the gravy becomes slightly thick.  Also, add some green coriander in it and mix it well.  In this way stuffed tinda masala will be ready.  Serve them and enjoy their taste.
