Then add chopped pumpkin, less than ½ tsp of salt or as per taste and ½ tsp of red chili powder and mix all well.  Roast the pumpkin with spices for 1-2 minutes and add 3-4 tbsps of water to it.  Then cover it on medium flame and let it cook for 5 minutes.

After the time is up, check the pumpkin.  If the pieces of pumpkin are still hard, then add some more water and cover it back and cook for 5 minutes.  After the time is up, run it and cut a piece and see if the piece looks soft, it means the vegetable is almost done.  Now add ½ tsp of amchur powder, ¼ tsp of garam masala and 1 tbsp of green coriander and mix it well.  Cover and cook it for 2 minutes, when the time is up, the pumpkin curry will be ready.  Take it out in a bowl and keep it.

Process of making Bhindi Sabzi

Wash and cut 250 grams of bhindi.  Put 2.5 tbsp of mustard oil in a pan and heat it.  When the oil is heated on a low flame, add ½ tsp of cumin, ½ tsp of turmeric, 1 tsp of coriander powder and 2 finely chopped green chillies and fry the spices lightly.  Now add chopped bhindi, ½ tsp of salt and ½ tsp of amchur powder to bring sourness.  Mix them well and fry for 2 minutes.  Add ¼ tsp of red chili and fry it, cover and cook on low flame for 5 minutes.

When the time is up, add 1 tsp of fennel powder to it and stir it once and cover it for 2-3 minutes.  When the time is up, the bhindi curry will be ready. Mix 1 tbsp of green coriander in it and take it out in a bowl.

Process of making Kheer

Boil 3 cups (750 ml) of milk in a pan.  When it comes to boil, put 3 tbsp of washed rice in milk (they have to be soaked for half an hour).  Cook the kheer on low-medium flame while stirring it every 2-3 minutes.  When the kheer thickens and the rice dissolves well in milk, add 1 tbsp of cashew nuts, 1 tbsp of almonds, 1 tbsp of raisins and 10-12 saffron threads.  Mix them well and cook for 2-3 minutes.  When the time is up, add 4 freshly crushed cardamoms and stir the kheer well.  Finally add ¼ cup of sugar and cook it for 2 minutes till the sugar dissolves, the kheer will be ready.

Process of making Kachori

Knead the kachori dough lightly and make small balls.  Make the dough round and give it a shape like a peda.  Give the shape of a bowl and fill the stuffing in it.  Apply some oil on the chuckle and roll it into the shape of a small puri.  After rolling all the kachoris in the same way, heat oil in a pan.  When the oil becomes slightly hot, put the kachoris in it and roast them till they become golden brown.  Kachoris will be ready.
