Spicy Mushroom Malai Curry | Restaurant Style Mushroom Masala Recipe
When you are bored of eating the same old regular veggies, then prepare spicy mushroom masala curry. This sabzi is not only easy to prepare but also gets ready in no time. We will add a special masala to this curry to make it extraordinarily delicious. So, let’s get started!
Ingredients for Mushroom Masala Sabzi
Mushroom - 1 Pack, 200 gms
Oil - 2-3 tbsp
Cumin Seeds - 1/2 tsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Dry Fenugreek - 1 tbsp
Tomato - 2 (150 ग्राम)
Green Chilli - 1
Ginger - 1/2 inch baton
Cashews - 10-11
Kashmiri Red Chili - 1.5 tsp
Fresh Malai or Fresh Cream - 1/4 Cup
Salt - 3/4 tsp or to taste
Coriander Leaves - 2-3 tbsp
Maggi Masala-e-Magic - 1 sachet
Mushroom Malai Curry Recipe
Take 200 grams of a mushroom pack and wash the mushrooms thoroughly. Do not keep them in water for too long otherwise, they will absorb the water. Immediately, after washing off the dirt, pat-dry the mushrooms.
Discard the bottom part and slice the mushrooms. Take a Kadai and heat 2-3 tbsp of oil in it. Add 1/2 tsp of cumin seeds to the hot oil and turn the flame low to avoid the burning of the spices.
Add 1/2 tsp of turmeric powder, 1 tsp of coriander powder, 1 tsp of dry fenugreek leaves to the Kadai, and saute the spices briefly. Prepare a paste of 2 tomatoes, 1-green chili, 1/2 inch ginger baton, and 10-12 cashews.
Add the prepared tomato purée to the Kadai and roast till the oil separates from the masala. keep the flame low medium and add 1.5 tsp of Kashmiri red chili powder. Once the oil separates from the masala, add 1/4 cup of fresh malai and roast the masala till the oil separates.
When the masala is roasted, add mushroom slices, 3/4 tsp of salt, and chopped coriander leaves to the masala. Cook everything for 1-2 minutes, add 1/2 cup of water and mix well. Keep gravy consistency light or heavy as you please.
Cover and cook the sabzi for 3-4 minutes over low-medium heat. We used cashews to make gravy heavy, however, you can use poppy seeds, melon seeds, or almonds.
Check the sabzi after 4 minutes. When the sabzi is almost ready, add a sachet of Maggi masala-ae-magic to the sabzi and mix well. Cover and cook the sabzi for another 2 minutes.
Transfer the sabzi to the serving bowl and garnish it with green coriander leaves. Mushroom Masala Sabzi is ready to be served. Serve it with chapati, paratha, nan, or rice.
You can serve this much sabzi to 4 members of a family. So, prepare and enjoy a delicious meal with your family.
