Spicy Masala Pav Recipe:

Heat 1 tsp of ghee in a pan. Once the ghee melts, add 1/2 tsp of cumin seeds, 1/4 tsp of turmeric powder, 1 tsp of ginger & chili paste to the pan and roast the masala briefly.

Add 1-finely chopped capsicum, 2-finely chopped tomatoes, and saute them lightly. Add more than 1/2 tsp of salt, 1 tsp of red chili powder, 1 tsp of pav bhaji masala, and cook while stirring occasionally. Cover and cook the stuffing for 2-3 minutes.

Suggestion: If you eat garlic/onions, then after roasting cumin seeds, fry 1-finely chopped onion, 7-8 chopped garlic cloves, and fry till pinkish.

After 2 minutes, add 2 tbsp of butter to the stuffing and mix well. Add 1 tsp of water and cook while mashing the tomatoes.

Once the butter starts separating from the masala, add 2-3 tsp of chopped coriander leaves and mix well. Turn off the flame and take the masala out on a plate.

Take 4-pav pieces and cut them from the center. Add butter to the pan and toast pav from both sides.

Spread prepared stuffing over the pav and garnish with coriander and ginger julienne. Similarly, prepare all the masala pav.
