Atta Bhatura Recipe | Atta Ke Bhature

 

Chole Bhature is a famous combination available in restaurants all over India. The north Indian dish is prepared with maida and chole. What if we replace Maida with wheat flour? Yes, we can! Today’s recipe is a perfectly healthy Atta Ka Bhatura. 

So, you too replace maida with Atta and get started with Atta Bhatura recipe. 

Ingredients Required for Atta Ke Bhature:

Whole Wheat Flour - 2 cups (300 grams)

Curd - ¼ cup

Semolina - ¼ cup

Salt - ½ tsp

Sugar - 1 tsp  

Baking Soda - ¼ tsp 

Oil for frying.

Atta Bhatura Recipe:

To make fluffy and soft Atta Ke Bhature, take 2 cups (300 grams) wheat flour (atta) in a bowl. Make space in the middle, add ¼ cup of curd, ½ tsp of sugar, ½ tsp of salt, and ¼ tsp of baking soda, and ¼ cup of suji (semolina). Adding suji will make the Bhature crispy and fluffy.

Suggestion: Don’t add too much baking soda then recommended, measure the amount and then add accordingly. 

Mix all the ingredients in the middle with flour and then mix it with whole Atta. Take lukewarm water for making the dough. Add water little by little to make the dough. Then knead it. 

Suggestion: The consistency of the dough should be similar to the one used for parathas. It should not be too thin or too thick. Add only ¾ cup of water. 

Once done, take ½ tsp oil and knead the dough with oil for 6-7 minutes. After this, cover and leave the dough for 2.5 hours. Keep the dough in a warm place. 

Alternative: If you can cover the dough with a towel, it will get ready quickly. 

[After 2.5 hours]

The dough has swelled up, take a little amount of dry Atta and press the dough with it. Again knead the dough. When the dough smoothens, make small balls from it. 

Now take a small ball, dust it with dry flour, and roll it with a rolling pin. Move the rolling pin through the corner and center evenly. 

Suggestion: The thickness of the Bhature will be similar to the Parathas. Keep the thickness medium. 

Heat the oil in the pan on high flame. To check if the oil is well-heated, drop a small ball of dough. If it floats immediately back to the top, the oil is ready. Now, you can add the Bhatura in the pan. 

On a high flame, if the Bhatura starts coming up press it down with a slotted spoon. This will make the Bhature puff up like a ball. Turn it upside down and fry it from both sides. Fry it until it turns golden brown. 

Once the Bhature is perfectly puffed, lower the flame. Afterward, take out the Bhatura on a plate and follow the same procedure for other Bhatura. 

With this, Atta Ke Bhature is ready to be served. You can serve it with chole, chutney, and achar. The tasty, as well as healthy Atta Ke Bhature, will make a perfect meal with any side dish.
