Sweet corn potato curry

Sweet corn potato curry is a curry with some sweetness of corns and softness of potato. In this recipe, its taste has been enhanced by adding a special ingredient to it which you will come across within the recipe.

Ingredients for sweet corn potato curry

  • Sweet corn - 1 cup (50 grams)
  • Potato (boiled, chopped) - 1 cup (200 grams)
  • Tomato (finely chopped) - 2 (150 grams)
  • Green chilli (finely chopped) - 2
  • Ginger paste - 1 tsp
  • Turmeric powder - ½ tsp
  • Oil - 2 to 3 tbsp
  • Green coriander (finely chopped) - 2 to 3 tbsp
  • Coriander powder - 1 tsp
  • Cumin seeds - 1 tsp
  • Red chilli powder - 1 tsp
  • Salt - 1 tsp
  • MAGGI Masala-Ae-Magic - 1 packet
  • Asafoetida - ½ pinch
  • Lemon - ½

How to make sweet corn potato curry

Preheat a pan and add 2 tablespoons of oil in it. Roast a teaspoon of cumin seeds on low flame along with a ½ pinch of asafoetida.

Add 2 finely chopped green chillies, a teaspoon of ginger paste, 2 finely chopped tomatoes, a ½ teaspoon of turmeric powder and a teaspoon of coriander powder to it. Add a ¾ teaspoon of salt, a teaspoon of red chilli powder to it and cook while mashing the tomatoes.

Add a cup of frozen sweet corn, a cup of boiled potatoes and cook while covering it on low flame for 2 to 3 minutes. The curry was cooked after 4 minutes, increase the flame and add a packet of MAGGI Masala-Ae-Magic to it.

Add some finely chopped green coriander to it, extract the juice of a ½ lemon and stir to mix well. Remove the curry in a serving bowl because it has cooked. Garnish it with some chopped green coriander before serving.

Serve it along with Paratha, Chapati and rice.

Suggestions

You can use an inch of grated ginger instead of the ginger paste.

You can increase or decrease the quantity of red chilli according to your taste
