Corn Meal Upma Recipe - Upma Recipe Maize flour - Cornmeal Vegetable Upma

During the winter season, we all often relish eating roti, halwa, mehri, khichdi prepared with maize flour but apart from these we also enjoy eating cornmeal upma as well. Whenever you need to make an instant breakfast, the just simply roast the maize flour, stir fry the veggies and within few minutes vegetable maize flour upma is ready.

Ingredients for Corn Meal Upma Recipe

  • Maize flour (cornmeal) – ½ cup (75 grams)
  • Green peas – ¼ cup
  • Cabbage – ¼ cup (finely chopped)
  • Carrots – ¼ cup (finely chopped)
  • Peanuts – ¼ cup
  • Green coriander – 2 tbsp (finely chopped)
  • Ghee – 2 to 3 tbsp
  • Asafoetida – 1 pinch
  • Cumin seeds – ½ tsp
  • Mustard seeds – ¼ tsp
  • Salt – 1 tsp or as per taste
  • Ginger – ½ inch piece (finely chopped)
  • Green chilly – 1 (finely chopped)
  • Curry leaves – 8 to 10

How to make Cornmeal Vegetable Upma

Take 1 tbsp ghee in a wok and allow it to melt. Now add maize flour into it. Keep the flame low. Stir and continue stirring until the flour gets golden brown in color. Transfer the flour to another bowl, once roasted well. Add 1 tbsp ghee in the same wok and stir fry the peanuts until crispy. Take out the peanuts as well when roasted well.

In the same wok with leftover ghee, add cumin seeds and red mustard seeds. When the seeds start crackling then add asafoetida, green chilies, ginger, curry leaves, green peas, cauliflower and chopped carrots. Stir the masala for a minute constantly. Now cover and cook for 2 minutes on low flame. Veggies will get little soft.

Now add 1 cup water, followed by some salt and let it simmer. When the water starts simmering, add roasted maize flour into it and keep stirring constantly. Mix the ingredients really well and cook upma gets thick in consistency. Now add roasted peanuts, 1 to 2 tsp ghee and some green coriander to it and stir well.

 Corn meal upma is ready. Transfer the upma in plate and garnish with peanuts and green coriander sprigs

Suggestions: 

  • Make sure you roast the maize flour on low-medium flame only.
  • The quantity of ghee can be adjusted as per your desire.
  • For 3 to 4 members
  • Time – 25 minutes
