Instant Rava Vada Recipe - Semolina Vada - Sooji Vada
Whenever you wish to prepare vadas instantly that sooji vadas are a must try. As compared to dal vada making sooji vadas is quite easy and less time consuming. These are crispy outside and soft inside and taste super delicious.

Ingredients for Semolina Vada
- Semolina – 1 cup
- Curd – ¾ cup (150 grams)
- Green coriander – 2 to 3 tbsp (finely chopped)
- Ginger – 1 inch (finely chopped)
- Green chilies – 2 to 3 (finely chopped)
- Salt – ¾ tsp or to taste
- Baking soda – less than ¼ tsp
- Oil – for frying vadas
How to make instant Sooji Vada
Prepare a batter for making the sooji vadas. For this, take a big mixing bowl and add semolina and curd into it. Stir to mix everything really well. After this, add ginger, green chilies, salt and mix everything really well.
Mix some water in the batter. The consistency of batter should be same to the batter prepared with urad dal. Cover and keep the batter aside for 10 to 15 minutes to set.
After 10 minutes, semolina will puff up. Now mix green coriander and baking soda to it. Batter is little thick, add 1 tsp water to it. Batter for making the vadas is now done and ready (almost 2 to 3 tbsp water is used for preparing this much batter).
Take enough oil in wok for deep frying the vadas. To check if the oil heated well, bring your hand over the wok. You will feel the heat over your hand, so the oil is rightly heated now. Now reduce the flame to medium.
Vadas can be prepared with two different methods. In first method, wet your hands with some water and take some batter on your palm. Now roll it a little and make a hole using your thumb. Gently slide the vadas into oil to fry.
For making vadas using another method, take a bowl and cover it with a cloth. Hold the cloth toghether tightly at the bottom. Wet this cloth with some water. Now place 1 to 2 tsp batter over it (you can adjust the size of vadas as per your desire). Roll into round vada and make a hole using your finger (making vadas with this method is easier). The moment vadas are roasted from beneath, flip the sides and let them roast from other side as well. Prepare rest of the vadas like this and place them oil to deep fry. Fry the vadas until they turn golden brown in color from all sides evenly.
When the vadas are fried well, drain out the fried vadas on a plate covered with absorbent paper. Hold the ladle diagonally at the edge of the wok so that extra oil drain back into it. Similarly, fry rest of the vadas as well. With this much batter 7 vadas can be prepared.
Steaming hot sooji vadas are ready. These vadas which are Crispy outside and soft inside with green coriander chutney or peanuts chutney and relish eating.
While making batter, make sure that the consistency is not too thick or thin.
