Process of making Paneer Makhana Gravy

Put 2 tomatoes, 1 green chilli, 1/2 inch of ginger and 10 cashews in a mixer jar and grind them finely.  Now cut 200 grams of paneer into big or small pieces as you like.  Put 1 tsp of ghee and 2 cups of makhana in the pan and fry it on low-medium flame while stirring continuously.  After roasting, take them out on a plate.

Heat 2 tbsp of oil and 1 tbsp of ghee in a pan.  In hot ghee-oil, add 1 bay leaf, 1 cinnamon, 5-6 black pepper, 2 cloves, 1 big cardamom (peel the seeds) and 1/4 tsp of cumin seeds and fry them lightly.

When roasted, add grounded paste and some water to it. Mix it and add 1 tsp of coriander powder, 1/2 tsp of turmeric powder and 1.5 tsp of kashmiri red chilli to it.  Mix them well and fry the spices on low-medium flame while stirring for a while till the oil separates.

When oil starts to separate lightly, put 1 tbsp of kasoori methi (crushed) in it.  Mix it and fry it while stirring it for a while till the oil separates.  When roasted, add 2 tbsp of cream to it and mix it well.  Fry it till the oil separates.

When roasted, add 3/4 cup of water and 3/4 tsp of salt and cook till it comes to a boil.  When it comes to a boil, add paneer, makhana and 8-10 roasted cashews and mix it well.  Then cover it and cook it on low flame for 3-4 minutes.

When the time is up, the Paneer Makhana curry will be ready.  Turn off the flame and take it out.  Serve it with roti, paratha, rice or any other and enjoy the taste.
