Separate the front and back side of 2 medium sized capsicum.  Now cut 1-1 cm thick rings, cut as many as you can.  Then finely chop the part which was separated from the front and back.

Now put 2 tbsp of oil in the pan and heat it on low flame.  When hot, add 2 tbsp of gram flour, 2 finely chopped green chillies and 1 tsp of grated ginger.  Roast the gram flour and spices a little, fry it until a good smell comes from the gram flour.

After the gram flour is roasted, add 1 tsp of cumin powder, 1 tsp of coriander powder and ¼ tsp of turmeric powder and fry it lightly.  After frying them for half a minute, add finely chopped capsicum and fry till cooked.  After roasting, mash 5 boiled potatoes, add ¾ tsp of salt, 1 tsp of red chilli powder, ½ tsp of amchur powder and ¼ tsp of garam masala.

Fry them after mixing all the ingredients, as well as press and break the potatoes.  After mixing the spices and potatoes well, add 1-2 tbsp of green coriander and mix it, the stuffing for the bonda will be ready.  Take it out and cool it.

Heat oil in a pan, oil should be medium-high hot.  Meanwhile, as the batter has become thick, add some water to it and prepare it for pakoras.  Then add ⅛ tsp of baking soda to it and mix it well.  When the oil is hot, put a capsicum ring in the batter and coat it well.  Then put it in the pan, now put as many as you can in the pan at a time.
