These sago patties are made in very less ghee and can be consumed during fasting
Ingredients for the sago patties
Soaked Sago Pearls- ½ cup (100 gms)
Boiled potatoes- 4 (200 gms)
Peanuts- ½ cup (100 gms) (roasted and coarsely grinded)
Green coriander- 2-3 tbsp (finely chopped)
Sendha salt- 1 tsp
Black Peppers- ¼ tsp (coarsely grinded)
Green chillies- 2 (finely chopped)
Ghee- 3 to 4 tbsp
How to make the sago patties
Soak the ½ cup of the sago pearls in 1 cup of water for 2 hours. Remove the remaining water from the sago pearls.
Peel the boiled potatoes and add them in the bowl of soaked sago pearls after mashing them. Add the coarsely grounded peanuts, the sendha salt, coarsely grounded black pepper, finely chopped green chillies and finely chopped coriander in it. Mix them properly for the patties mixture.
Apply some ghee on your palms to make them slippery. Take a portion of the mixture, roll to make a round ball of it and flatten it by pressing between your palms. Make the exact flat balls of the half dough and place them aside. Keep the half dough aside to prepare the round balls of it for frying in the appam maker.
To fry patties in pan
Preheat the pan and add 1-1.5 tbsp of ghee in it and leave it to melt. After, the ghee melts place the patties in it to fry. Cover the pan and fry the patties for 3-4 minutes on the low-medium flame and check them afterwards.
Check them after 4 minutes, patties are slightly fried from the bottom so again cover and fry them for 3-4 minutes. Check the patties, they are golden brown in color from the bottom and acquired 10 minutes to fry from one side. Flip the patties and fry them for 5-6 minutes on low flame and then check them.
Check the patties after 5 minutes, they are fried from the bottom. Now, fry them uncover for 2-3 minutes and keep on checking them after every 2-3 minutes. Patties are golden brown from both the sides and well fried.
To fry patties in the appam maker
Preheat the appam maker on low flame and add ghee in all the moulds of the appam maker. Place the patties in its moulds to fry, cover and fry them on low flame for 5-6 minutes.
Check the patties after 4 minutes, they are not fried yet. Cover and fry them for for 4-5 minutes. Check the patties, flip them from the bottom, cover and fry them for 5-6 minutes.
Check the patties, they are not fried yet. Now, uncover them and fry them until they are golden brown from all the sides.
Patties are golden brown and fried from all the sides. Place the patties on the plate. It takes almost 16-17 minutes to fry the one round of the patties.
The sago pearls patties are prepared. The hot sago pearls patties can be served with green coriander dip. You can have them with any dip according to your taste.
Suggestions
If you are not preparing these for the fasting period then you can add normal salt and variety of masalas in it.
