Vegetable Spring Rolls Recipe

Wrappers for making spring roll can be easily brought from market. But if you don't find them in market nearby then try making them very easily at your home.

Ingredients for Vegetable Spring Rolls Wrappers
For Vegetable Spring Rolls Wrapper:
- Refined Flour - 100 grams (1 cup)
For Vegetable Spring Rolls Stuffing:
- Cabbage - 200 grams (1 cup finely chopped)
- Paneer - 100 grams (crumbled finely) (1 cup)
- Green chilly - 1 (finely chopped)
- Ginger - 1/2 inch long baton (grated)
- Black pepper - less than 1/4 tsp
- Red chilly powder - less than 1/4 tsp (if you like eating spicy)
- Ajinomoto - less than 1/4 tsp
- Soya sauce - 1 tsp
- Salt - To taste (less than 1/4 tsp)
- Oil - for frying spring rolls
How to make Vegetable Spring Rolls
Strain and take refined flour in a bowl. With help of water prepare a smooth and thin batter (for 1 cup of refined flour use 1.5 cup of water). Cover and keep aside the batter for 1 hour so that batter gets fluffy. If you'll use this batter immediately for making wrappers then it can break while stuffing.
Prepare stuffing for the spring rolls:
Take 1 tbsp oil in a wok and heat it sufficiently. Now add green chilly, ginger, chopped cabbage and paneer and saute for a minute. After sauteing, add black pepper, red chilly powder, ajinomoto, soya sauce and salt and mix all ingredients really well. Stuffing is now ready.
Prepare wrapper for Spring roll:
Preheat a non stick tawa. Pour some oil over the hot tawa and with help of oil spread it evenly. Make sure tawa is not too hot. Pour 1 tsp batter over the tawa and with help of a spatula thinly spread it like a cheela. Roast it on low flame. When there is change on the upper side of the wrapper and it starts separating from corners of the tawa, then place this wrapper over a oil greased plate.
Place 2 tsp stuffing over this wrapper and spread it thinly, lengthwise. Fold the wrapper from both left and right sides, covering the stuffing. Fold it from the top and make a roll. Place the roll over a plate and like wise prepared rest of the rolls (with 1 cup of refined flour 8 rolls can be prepared).
We can shallow as well as can deep fry the vegetable spring rolls.
For shallow Frying:
Take 1 tbsp oil in a wok and heat it sufficiently. Now place 2 spring rolls in the oil and fry until they get slightly brown in color from all sides. Take off fried rolls in a plate. Fry as many rolls you want to shallow fry.
For deep frying:
Take some oil in a wok and allow it to heat. Now when oil is hot, place two spring rolls or as many as possible into it and fry until they turn brown in color from all sides. Spread an absorbent paper on a plate and place the spring rolls over it. Likewise fry all the spring rolls.
Vegetable Spring rolls is ready. Serve steaming hot spring rolls with green coriander chutney, tomato sauce or any other chutney as per your taste and relish eating.
You can take any other vegetable as per your taste and chop them finely. Cook them slightly and stuff them in spring rolls. You can even boil noodles and stuff them in spring rolls. You can increase or decrease the quantity of spices as per your taste.
