    This recipe in EnglishAnnakoot curry is prepared on the next day after Diwali for Annakoot-Goverdhan Pooja as prasad. At this time new vegetables are available in the market like cauliflower, peas, carrots etc..to start eating these vegetables Annakoot curry is prepared..Take a little of all the vegetables available in the market to prepare Annakoot curry, many shop keepers also sell these vegetables in packets. This curry is first offered to the deity then later it is distributed to all in the form of prasad. In North India this prasad is made in all of the temples and mostly homes. So let us prepare Annakoot today.Ingredients for AnnakootPotatoes - 2 to 3Brinjal - 2 to 3Cauliflower - 1 small floretSem(broad beans) - 100 gramsSangri(radish beans) - 100 gramsCarrots - 1 to 2Radish - 1 to 2Tinde(apple gourd) - 2Arbi - 2Lady finger - 6 to 7Parwal(pointed gourd) - 2 to 3Capsicum - 2Lauki(bottle gourd) - 3 inch long pieceRaw banana - 1Pumpkin - small pieceTomatoes - 3 to 4you can add a little of any any other vegetables that you likeSpices for Annakoot RecipeGinger - 4 inch long pieceGreen chilly - 5 to 6Green Methi(fenugreek) - 1 small bowl(chopped)Oil - 3 to 5 tbspHeeng(asafoetida) - 2 to 3 pinchJeera(cumin seeds) - 1 tspTurmeric powder - 1 tspCoriander(dhaniya) powder - 3 tspRed chilly powder - 3/4 tspAmchur(mango) powder - 1/2 tsp (if you want)Garam masala - 1/2 to 1 tspSalt - 2 tsp (add to taste)Green coriander - 100 gramsHow to prepare Annakoota RecipeClean all the vegetables, peel potatoes, break the stem of to brinjals, break cauliflower into pieces, cut off the thread from both the sides of the sem. Cut off the stems from both ends of the sangri ,peel the carrots, cut off both the ends of the lady's finger, peel tinde and arbi, peel radish and remove its stem, peel parwal and cut its edges from both ends, remove the stem of the capsicum then cut into 2 halves and remove the seeds as well., peel lauki and banana. Wash all of these vegetables properly.Remove water from these washed vegetables, cut potatoes, brinjals, cauliflower into big pieces. Cut the rest of the vegetables into medium sized pieces, finely chop the radish leaves as well.Wash tomatoes into small pieces, break the chillies' stems, wash and chop them. Peel, wash and grate ginger. Wash green coriander and chop it finely.Pour oil in a big frying pan and heat, put Heeng and Jeera in hot oil. After the Jeera is roasted put turmeric powder, coriander powder and gently fry. Add green chillies, ginger and gently fry the spices.Now put all the vegetables that you have cut in the pan, put salt and red chilly powder then mix all the vegetables with the spices as you stir continuously. Put about 1 cup of water, cover the pan and cook vegetables on a high flame till it comes to boil. Once the curry comes to boil cook on a low flame, after 15 minutes check to see if the vegetables have turned soft. If not then cover the lid and let it cook some more, when vegetables turn soft then mix the tomato pieces in it. Cook till tomatoes become soft then put garam masala, Amchur powder and green coriander in the curry.Tasty Annakoot Bhog is ready. Offer Annakoot Prasad to Lord Krishna's deity then later have it yourself with puri or roti.

    After Diwali, we celebrates Annakoot and Govardhan Puja on second day of diwali rounded up next day by Bhaiya Dooj. During the Annakoot festival, the temples of Krishna Kanhaiya are decorated with the replicas made of sweets, especially laddoos. On the Annakoot day, Chappan Bhog (56 different types of sweets) is offered to Krishna Kanhaiya. We used to make Annakoot on the second day of Diwali. My mom recited Goverdhan Katha / Annakoot Katha on that day.Thanks for sharing recipe

    NishajiKya main 5-6 sabjiyon se hi yeh sabzi bana sakti hoon jaise - aloo, mooli, baingan, phool gobhi, gajar, tinda. Agar is sabji ko cooker mein banana ho to kaise banayenge. Pl reply immediately.

    The bhog offered to Lord Krishna does not contain tomato and carrot, the bhog is pure satvik and tomato and carrot fall under tamsik food category. Secondly, annakoot is not prepared with fresh vegetables but it is made with leftover vegetables
