काजू कतली (Kaju Katli Recipe)

क्या आप काजू कतली (kajoo katli burfi ) पसन्द करते हैं? बाज़ार में काजू कतली केवल वर्क लगी हुई मिलती है.

चूंकि कथित "चान्दी का वर्क" नान-वेजीटेरियन श्रेणी में आता है इसलिये सभी परिवारों में इसे खाया नही जाता. मुझे तो काजू कतली (kaju katri) केवल घर पर बना कर खिलाना ही पसन्द है. इसे बनाना बहुत ही आसान है. आईये आज काजू कतली ( kajoo katli) बनायें.

आवश्यक सामग्री - Ingredients for Kajoo Katli

  • काजू आधा किलो
  • पिसी हुई चीनी 400 ग्राम
  • इलायची पिसी - 1 चम्मच
  • देशी घी दो चम्मच

विधि - How to Make Kajoo Katli

काजू को लगभग एक घंटे पहले गरम पानी में भिगो दीजिये. एक घंटे बाद काजू तोड़ कर देखिये कि ये अन्दर से भी अच्छी तरह मुलायम हो गये हैं या नहीं. यदि काजू अच्छी तरह से मुलायम हो गये हों तो इनमें से पानी निकाल कर मिक्सी में एकदम महीन पीस लें.

इन पिसे हुये काजू के पेस्ट में पिसी हुई चीनी अच्छी तरह मिला लें.

आग पर कड़ाही चढाये और इसमें काजू और चीनी का पेस्ट डाल कर पकायें. आग एकदम हल्की रखें. मिश्रण को लगातार चलाते हुये पकायें, थोड़ी देर बाद यह मिश्रण गाड़ा हो जायेगा. इसे उतार लें. इसमें पिसी इलायची मिला लें और दस पन्द्रह मिनट तक तक ठंडा होने दें.

मिश्रण ठंडा हो जाय तो इसे चकले बेलन पर घी लगाकर, रोटी की तरह पतला बेल लें (आप चाहें तो इसे 2 चौकोर पोलीथिन के टुकड़े लेकर,अन्दर की तरफ घी लगायें, काजू का मिश्रण उसके बीच में रखें और बेल लें). थोड़ा सूखने पर घी चुपड़ी हुई ट्रे अथवा थाली में बिछा दें. अब इसे मनचाही शक्ल की कतली में काट लीजिये.

आपकी काजू कतली (Kaju Katli ) तैयार है. आप इसे बनाने के दस दिनों तक खा सकते हैं.

    nisha ji when the kaju mixture cooled up will it form like dough or we have to knead it please tell me because without kneading how can it be possible to roll it out..

    Often it is seen that whatever is written in recipe, when followed does not yield the final product. Att recipes should be followed immediately with TIPS as to what all to take care about like timing, any additives, heat ratio, ingredient variety etc.

    Dear Nisha, I am surprised to find out that 'chandi ka varak' under non veg, so i did surfed on net and found out that the silver are beaten in between animal skin etc... to make sheets. are you sure about it? well i have also read synthetic sheets can also be used in place of anything made up of animal intestine made sheets so i thought it may be it is wrong. is it an age old practice to produce silver vark using animal skin/intestines or has it started in last few years by some mean people.. Kindly reply if you have more details on this...

      namaste, bajar mein jo chandi ka vark milta hai wo chandi nahin hoti aluminiam se banaya jata hai. aaj kahin chandi ka asli vark nahin milta. islye ise nahin khana chahiye.

    प्रिया, अगर काजू कतली नरम है तब उसे आप दुबारा पकाइये, आग धीमी रखिये, चमचे से लगातार चलाते रहिये. टैस्ट कीजिये थोड़ा सा मिश्रण निकाल कर प्लेट में डालिये और हाथ से देखिये कि वह जमने वाली कन्सिसटैन्सी की हो गई है और आग बन्द कर दीजिये.

    Respected mam, in above mentioned recipe of Kaju Katli yoy have mentioned that sliver paper/ Chandi Ka Vark use to come within the preview of Non Vegitarian list. is it true, can you provide me list in which it is mentioned. Genraly we use it also in or on the religious stuf or places.I wait for your possitive reply.

    Hello Mam,

    Want to try Kaju Katli at home,so find it out the recipe in your site,have one query for that should is it possible that it could be made by chashani,instead of added blended sugar or tagar into the paste of kaju, n secondly instead of raw kaju should we can try with the Dry blended kaju, is the results is different, Please answer me.

    Nisha ju, meri burfi ki shape achhi nahin aayi. taste to achha tha. mein burfi aur pakana chahti thi par paste jalne jisa lagne laga tha.
    bura aur kaju ka ratio bhi thik liya tha.

    शिखा, बर्फी थोड़ी अधिक पक जाने पर सूखी हो जाती है और कम पके तो गीली रहती है, बर्फी बनाने के लिये थोड़ी प्रेक्टिस और चैक रखने की आवश्यकता होती है, बर्फी बनने में लगा समय फिक्स नहीं कर सकते, अभी हम कुछ ही दिनों में इसके लिये वीडियो बनायेंगे, इसके बाद प्रोब्लम कम आयेगी.

    sugar-250gm
    water-200ml
    kesar-1chutki

    pehle kadai main paani garam kre or phr usme sugar dal kr pakaye ..ab usme thoda sa kesar dal de....chasni gaadi hone tk pakaye km se km half hour main chasni tayar ho jaegi...dhyan rhe chasni thodi gaadi honi chaheye....(teen taar wali chasni)...kaaju ko barik pees le..ab kaaju k paste ko us chasni main daal de or dheme gas pr pakaye...thoda sa ghee mila de.....ab ye paste thoda sa aate jaise ho jaega....gas se utar kr thali main thoda sa ghee lga ke usme faila de....5min rakha rehne de..or thanda hone pe pieces kaat le....maine aise he banayi bhut tasty bni...
