Dal Bati Recipe
दाल बाटी (Daal - Batti) जितना राजस्थान में पसंद किया जाता है उतना ही दाल बाफला (Dal Bafla) के नाम से इंदौर-मालवा के इलाके में पसंद किया जाता है.

जब भी कभी छुट्टी हो, घर में मेहमान हों, और आप गप शप में दिन बिता रहे हों तो दाल बाटी (Daal Baati)  यानी दाल बाफला (Dal Bafla)  बनाईये. इसे बनाते समय आप बीच बीच में अपनी गप शप भी करते रहिये.  आपको इन्हें बनाते समय बातचीत के लिये भरपूर समय मिलेगा और आप स्पेशल खाना भी तैयार कर सकेंगे.

बाटी के लिये आवश्यक सामग्री ( For bati or dumplings)

  • गेहूँ का आटा- 400 ग्राम( 4 कप )
  • सूजी ( रवा ) - 100 ग्राम ( एक कप)
  • घी - 100 ग्राम ( आधा कप )
  • अजवायन- आधा छोटी चम्मच
  • बेकिंग पाउडर (यदि आप चाहें)
  • नमक - स्वादानुसार (एक छोटी चम्मच)

विधि How to make Dal Bati

आटा और सूजी को एक बर्तन में मिला कर 3 टेबिल स्पून घी, बेकिंग पाउडर, अजमायन और नमक मिला दीजिये. गुनगुने पानी की सहायता से आटे को चपाती के आटे से थोड़ा सा सख्त आटा गूथ लीजिये.  आटे को 20 मिनिट के लिये ढककर रख दीजिये, ताकि आटा फूल कर सैट हो जाय. 20 मिनिट बाद इस आटे को तेल के हाथ से मसल कर चिकना कर लीजिये. गुथे आटे से थोड़ा आटा तोड़ कर मध्यम आकार के गोले बना लिजिये.
आप चाहें तो इसके अन्दर मटर की पिठ्ठी, आलू की पिठ्ठी, पनीर की पिठ्ठी या मेवे की पिट्ठी बनाकर भर सकते हैं.

बाटियाँ 2 तरीके से बनाई जाती हैं.

बाटी को पानी में उबालकर बनाना
1 लीटर पानी भगोने में भर कर गैस पर गरम करने के लिये रख दीजिये और जब पानी में उबाल आ जाय तब ये गोले उबलते पानी में डाल दीजिये. 15 मिनिट तक इन गोलों को उबालिये.
पानी से उबले हुये गोले निकाल कर प्लेट में रखिये और अब इनको तन्दूर या ओवन में ब्राउन होने तक सेक लीजिये. सेकी हुई बाटियों को पिघले हुये घी में डुबा कर निकालिये. तैयार बाटियाँ प्याले या प्लेट में रखिये.

बाटी को बिना उबाले बनाना
इस तरीके से बाटी उबाले बिना ही बनायीं जाती हैं. तन्दूर को गरम कीजिये, तन्दूर में आटे के गोले सिकने के लिये रखिये, इन गोलों को तन्दूर में पलट पलट कर सेकें. बाटियाँ फटने लगेंगी और ब्राउन हो जायेंगी. सिकी बाटी ओवन से निकाल कर प्लेट में रख लीजिये. बचे हुये घी को पिघला कर रख लीजिये. सेकी हुई बाटियों को फोड़ कर घी में डुबा कर निकाल कर प्लेट या प्याले में लगाइये.

दोनों तरह की बाटियां अच्छी होतीं है. आप इनमें से किसी भी तरीके से बाटी बनाइये और बताइये कि आपको कौन सी तरह से बनी बाटी ज्यादा अच्छी लगी.

बाटी के लिये मिक्स दाल

  • अरद की दाल - 100 ग्राम ( आधा कप )
  • मूंग की दाल - 50 ग्राम ( 1/4 कप )
  • चना की दाल - 50 ग्राम ( 1/4 कप )
  • घी- 2 टेबिल स्पून
  • हींग - 1-2 पिन्च
  • जीरा- 1 छोटी चम्मच
  • हल्दी पाउडर- आधा छोटी चम्मच
  • धनियाँ पाउडर - एक छोटी चम्मच
  • लाल मिर्च पाउडर - आधा छोटी चम्मच
  • टमाटर - 2 - 3
  • हरी मिर्च- 1-2
  • अदरक - 2 इंच लम्बा टुकड़ा
  • गरम मसाला - एक चौथाई छोटी चम्मच
  • हरा धनियाँ - छोटी आधा कटोरी ( बारीक कटा हुआ )
  • नमक स्वादानुसार ( एक छोटी चम्मच )

विधि

दालों को 1 घंटा पहले धो कर पानी में भिगो दीजिये.
भीगी हुई दालों को कुकर में, दुगने पानी ( 2 कप पानी) डालकर और नमक डाल कर पकने के लिये गैस पर रख दीजिये. एक सीटी आने के बाद 2-3 मिनिट तक धीमी गैस पर पकायें. गैस बन्द कर दीजिये.
टमाटर, हरी मिर्च और 1 इंच अदरक का टुकड़ा मिक्सी से बारीक पीस लीजिये.

कढ़ाई में 2 टेबिल स्पून घी डाल कर गरम करें. हींग और जीरा डाल दें. जीरा भुनने के बाद हल्दी पाउडर और धनियाँ पाउडर डालें. 2-3 बार चमचे से चलायें और पिसा हुआ टमाटर का मिश्रण, लाल मिर्च पाउडर और 1 इंच लम्बे अदरक को बारीक काट कर डाल दें. मसाले को तब तक भूनें जब तक कि मसाले के ऊपर तेल न तैरने लगे, ये मसाला कुकर में पकी हुई दाल में मिला दीजिये आवश्यकतानुसार पानी (दाल को आप जितना पतला चाहें) मिला दीजिये, उबाल आने पर गरम मसाला डालिये और नमक को टेस्ट करके आवश्यकतानुसार थोडा़ सा और डाल दीजिये. आधा हरा धनियाँ डाल कर मिला दीजिये. दाल तैयार हो गयी है.  दाल को प्याले में निकालिये और बचे हुये हरे धनिये और घी डाल कर सजाये.
दाल और बाटियाँ तैयार है. गरमा गरम दाल बाटी परोसिये और खाइये.

6 लोगों के लिये. | बनाने में समय : लगभग 90 मिनट.

    Nisha: हिना जी, बाटी और नान के लिये तो तंदूर ही अच्छा रहता है. वैसे बाटी तो बहुत ही पहले की डिश है, उस समय ये तंदूर थे ही नहीं, बाटी को कडों (उपलो) पर पकाया जाता था

    प्रीती, बाटी के लिये अधिक तापमान की आवश्यकता होती है, माइक्रोवेव कनवेक्सन में अच्छी बाटी नहीं बनेगी.

    Nisha Ji,India mein Dal Baati ka Oven bhi aata hai,lekin yahan par humare ghar mein microwave oven hai..jismein ki baati achi nahi banti,banti hi nahi hai,humare ghar mein yahan par toster oven bhi hai,usmein grills hain,please batayiye kya hum toster oven mein baati bana saktein hain..yahan par daal baati khaane ke liye taras gaye..plz ny solution..

    निशा: गुरप्रीति, मैं तो बाटी इलैक्ट्रिक तन्दूर में ही बनाती हूं, लेकिन आप ओवन में इस तरह बाटी सेक कर देखिये, पहले ओवन को अधिकतम तापमान पर गरम कीजिये, इसके बाद तापमान400 डि. से. पर बाटी सेकने रखिये, 4-5 मिनिट में बाटी चैक कीजिये अगर वह ब्राउन हो रही है, तब और 4 मिनिट तक गहरी ब्राउन कीजिये, बाटी पलटिये और दूसरी और भी 5 मिनिट का या बाटी सिकने के अनुसार समय देकर बाटी ब्राउन होने तक सेकिये. अपने अनुभव हमें अवश्य बताइये.

    Nishaji daal me chaunk lagate samay agar sabut laung, tej patta aur sookhi sabut laal mirch bhi dalein to adhik anand aayega.Hamare ghar per aise hi banate hain. Aapki receipies acchi hain aur site bhi bahut acchi hai.

    I had made Dal, Bati & Ghatteki Subji a type of rajasthani menu. It was fantastic. I had prepared it before too. but yesterdays Dal & bati was amazing. It is very easy to prepare.     निशा: बाटी में क्रेक आने ही चाहिये,बाटी सिकने के बाद इसे घी में डुबाने क्रेक में घी भर जाता है इससे बाटी बड़ी स्वादिष्ट हो जाती है, अगर आप आटे को थोड़ा नरम गूथे तो बाटी में क्रेक नहीं आयेगे.

    daal baati bina tale kadahi mei bhi ban jati hai. bhaari tale ki kadhai acche se garam kar len. usme baati ke gole rakh kar, kisi dhakkan se dhak den. gas dheema kar den. beech beech mei palat ti rahen. soft or acchi baati 30 - 45 min mei tayyar ho jayegi. :)

    I am gujarati but my mother makes very delicious bati. Now after getting married I am in London and wished to make it here.     Nishaji, I couldn't wait to tell you.. My dal-baati was made delicious.. I had used half green mung, toor daal, yello mung daal, chana daal, and red lentiles to prepare for daal... and did the masalas as you said - my husband loved it.... Thanks.. Your recipe was reallly nice.

    Baati bahut hi achch bani hai. mere oven mein 250 deree C se jyada temp nahi ho sakt hai...so maine 250 degree C par oven ko 15 min ke liye pre heat kiya aur phir usame tray mein baati rakhi. Tray ko middle rack par rakha tha. total 20 min tak oven par rakha. har 5 min mein baati ko palatati rahi. Hope it would be useful. Thanks

    निशा: तुलिका, तंदूर को पहले से गरम करके उसमें बाटी रखे देखिये कि बाटी अगर जल्दी से लाल हो रही है तो तंदूर तुरन्त बन्द कर दीजिये और बाटियों को बन्द तंदूर में ही सिकने दीजिये, तन्दूर ठंडा होने लगे तो फिर से चालू कीजिये और बाटियों को पलट पलट कर ब्राउन होने तक सेकिये. जब आप बाटी बना रही होंगी तो स्वयं मेनेज कर लेगी.

    I live in Germany and I want to make Bati but I have electric oven only. When I was in India I used to make Bati in Tandoor (gas) and that was perfect. I tried here in oven but they got very hard and ofcourse not enjoyable any more.
    Could you please suggest me how to make good Baties in electric oven.

    2 mediam size ke baingan le ke tandoor me roast hone ke lie rakh de . potato boil karke tanddor me thodi der ke lie garam hone ke lie rakh de isee uska paani thoda sookh jayega or roasted potato ki se feeling ayegi.jab baingan thoda soft ho jaye to chhili hue lahsun bhi usi me laga de. whole onion bhi tanddor me rakh de . thodi der baad jab baingan bhun jaaye tab use chheel ke usme uble bhune aloo, lahsun, hari mirach, adrak, bhune pyaj sab mila de. upar se thoda mustord oil, mango powder and salt daale. Delicious baingan ka bharta taiyaar hai jo daal baati ka maja dugna kar dega :)

    hum log aata gundhane k lie ussme thhoda oil,salt,haldi,ajwayan & soda mix karte hai or thhoda kattha gundhate hai usske baad batiyon ko gol bana kar usse thhoda dabate hai (usse batiyan ovan me jaldi or andar tak sik jaati hai) or fir ovan ko garm kark ussme batiyan e tez anch par rakh dete hain fir har 2-2 mints me palatate hai sikane k baad isse kapade se daba kar todhate hai fir ghee me thhoda frty kar lete hai.
    or daal hun 2 tarah se banate hai
    1) pehle daal dho kar galate hain fir cooker me garm tel me rai jeera thhoda khada garm masala dal kar ussme kati hui lahsun pyaaj or 2-3 hari mirch medium kati hui dalte hai or pakne k baad ussme lahsun,pyaaj past daal kar pakate hain fir ussme haldi namak tamatar or laal mirch dalne k baad ussme daal dal kar thoda pakate hai or dhakkan laga kar 1-2 siti lagakar gas band kar dete.
    2) pehle daal dho kar gala kar cooker me paani lekar lahsun pyaaj past ko ubaal kar ussme daal,haldi thodi lal mirch or namak dal kar 1-2 siti lagate hai fir ladhai me tel garm kark ussme rai jeera or khada karm masala dal kar ussme kati hui lahsun pyaaj or kati hui hari mirch daalkar ubli hui daal kadhai me daal kar mix karte hai fir serv karte hai

    hello nisha ji mere paas electronic tandoor nahi hai. gas tandoor hai kya us par ban sakti hai. par kaise kabhi use nahi kiya. kya usme jo jaali de rakhi he us par baayi rakh de or dahk de. mujhe nahi pata jo gas tandoor mae paas he kya vo thik hai. kya isme cookies, tikka bhi ban sakta hai.plzzz bataye
