Vegetable Momos recipe

मोमोज तिब्बत की रैसिपी है. खाने में बड़े ही स्वादिष्ट होते है, इसलिये भारत में मोमोज बहुत पसन्द आने लगे हैं, मोमोज (Tibetan Steamed Dumplings) बनाने में तेल का प्रयोग बहुत ही कम होता है, और इस खाने को भाप से पकाया जाता है. इसलिये मोमो जल्दी पचने वाला और पोष्टिक खाना है. आज के लिये मोमो रेसिपी (Momo recipe) प्रस्तुत है.

आवश्यक सामग्री  - Ingredients for Vegetable Momos

मोमो के लिये

  • मैदा - 100 ग्राम ( 1 कप )

पिट्ठी के लिये

  • शिमला मिर्च - 1
  • बन्द गोभी -  एक कप ( कद्दूकस किया हुआ )
  • गाजर -  आधा कप कद्दूकस की हुई
  • टोफू या पनीर - आधा कप क्रम्बल किया हुआ
  • तिल का तेल - 2 टेबल स्पून
  • काली मिर्च - एक चौथाई चम्मच से कम
  • लाल मिर्च - 1/4 चम्मच से आधा (यदि आप चाहें)
  • हरी मिर्च - 1 बारीक काटा लीजिये
  • अदरक - 1 इंच टुकड़ा जो कद्दूकस कर लिया है.
  • सिरका 1 टेबल स्पून
  • सोया सास - 1 टेबल स्पून
  • हरा धनियाँ -  2 टेबल स्पून ( बारीक कटा हुआ )
  • नमक - स्वादानुसार (1/4 छोटी चम्मच से थोड़ा अधिक)

विधि - How to make Momos

मैदा को किसी बर्तन में छान कर निकाल लीजिये. पानी की सहायता से नरम आटा गूथ कर तैयार कर लीजिये. गुथे आटे को 1 घंटे के लिये ढककर रख दीजिये, ताकि आटा फूल कर सैट हो जाय.

तब तक पिठ्ठी तैयार कर लेते हैं. (अपने स्वादानुसार प्याज और लहसुन भी इसमें प्रयोग कर सकते है)

कढ़ाई में तेल डाल कर गरम करें, गरम तेल में अदरक, हरी मिर्च डालकर थोड़ा सा भूनिये,  कटी हुई सब्जियाँ, टोफू या पनीर डाल दीजिये. कालीमिर्च, लाल मिर्च, सिरका, सोया सास, नमक और हरा धनियाँ मिला कर 2 मिनिट चमचे से चलाकर भून लीजिये.  मोमोज में भरने के लिये पिठ्ठी तैयार है. (अगर आप इसमें प्याज और लहसुन का इस्तेमाल कर रहे हैं, तो सबसे पहले प्याज और लहसुन को सब्जी डालने से पहले भूनें, इसके बाद सब्जी को डालकर भूनें)

गूथे हुये आटे से छोटी छोटी गोल लोई बनायें (एक कप आटे से 20 -22 लोई बन जाती है), लोई को सूखे मेदा में लपेटे और गोल गोल 3 इंच व्यास की पूरी की तरह पतला बेल लें. बेली हुई पूरी में पिठ्ठी भरें और चारों ओर से मोड़ डालते हुये बन्द करदें, या आप बेली हूइ पूरी में पिठ्ठी भरकर गुझिया की तरह मोड़ डालते हुये भी बन्द कर सकते हैं.

सभी मोमोज इसी तरह तैयार कर लीजिये. अब मोमोज को भाप में पकाना है. इसके लिये या तो आपको मोमोज पकाने वाल बर्तन लेना पडे़गा, जिसमें चार या पाँच बर्तन एक के ऊपर एक लगे रहते हैं. नीचे का खाना थोड़ा बड़ा होता है जिसमें, पानी भरा जाता है, और ऊपर के तीन या चार बर्तन जिनमें जाली रह्ती है.

सबसे नीचे वाले बर्तन में एक तिहाई बर्तन पानी से भर गैस पर गरम करने के लिये रख दें. दूसरे बर्तन, तीसरे, चौथे बर्तन में मोमोज लगा कर रख दें. एक बर्तन में करीब 12-14 मोमोज आ जाते हैं. भाप से 10 मिनिट पकायें. सबसे नीचे वाले बर्तन के मोमोज पक गये हैं. दूसरे बर्तन को नीचे कर दें और इस बर्तन को सबसे ऊपर कर दें. 8 मिनिट बाद इसे भी ऊपर कर दे और तीसरे बर्तन के मोमोज को पानी वाले बर्तन के ऊपर रखें और 5-6 मिनिट भाप में मोमोज को सेक लें. हम समय इस लिये कम करते जा रहे हैं क्यों कि सभी बर्तन एक के ऊपर एक हैं, और भाप ऊपर की ओर जाकर उन्हैं भी थोड़ा पकाती है. मोमोज
तैयार हैं.

अगर हमारे पास मोमोज पकाने का यह बर्तन नहीं हैं तो किसी इस तरह के बर्तन में पानी भर कर गरम कीजिये जिसमें चावल छानने वाली चलनी आ जाय, चलनी में मोमोज लगा कर रखिये और चलनी को गरम पानी हो रहे बर्तन में इस तरह लगाइये कि पानी चलनी के अन्दर न जाय, पानी में कोई भी मैटल स्टैन्ड रख कर, मोमोज वाली चलनी रखें. 10 मिनिट तक मोमोज भाप में पकायें. यदि मोमोज और हैं तो पहले वाले मोमोज निकाल कर प्लेट में रखें. दूबारा चलनी में मोमोज भरें और 10 मिनिट भाप देकर सेके.

वेज मोमोज (Momo) तैयार हैं. प्लेट में मोमोज (Vegetable Momos) निकाल लीजिये, लाल मिर्च की चटनी या फिर हरे धनिये की चटनी के साथ परोसिये और खाइये.

मोमोज के साथ खाने के लिये चटनी - Chatney for Momos

हमारे यहां चटनी तो नाना प्रकार की बनाई जाती है, लेकिन मोमोज के साथ के लिये एक खास प्रकार की चटनी खाई जाती है, आइये हम वही मोमोज के साथ खाई जाने वाली चटनी बनायें.

आवश्यक सामग्री - Ingredients for Chatney

  • टमाटर - 2
  • लाल मिर्च साबुत - 5-6
  • जीरा - आधा छोटी चम्मच
  • मैथी दाना - आधा छोटी चम्मच
  • हल्दी - 2 पिंच
  • हींग - 1-2 पिंच
  • नमक - स्वादानुसार
  • तेल - 1 टेबल स्पून

विधि - How to make Chatney for Momos

टमाटर धोइये और काट लीजिये,
कढ़ाई में तेल डाल कर गरम कीजिये, हींग, जीरा और दाना मेथी डाल कर तड़काइये, हल्दी डाल कर,टमाटर और लाल मिर्च डालिये, 3-4 मिनिट तक टमाटर के गलने तक पकाइये, ठंडा होने पर मिक्सर में डालिये, नमक मिलाइये और बारीक पीस लीजिये.

लीजिये मोमोज के साथ खाने के लिये चटनी तैयार है.  चटनी को किसी प्याले में निकालिये और मोमोज के साथ खाइये.

यदि आप लहसुन का स्वाद पसन्द करते हैं, तब हींग की जगह 4-5 लहसुन की कली छील कर, जीरा मेथी भुनने के बाद, डाल कर भूनिये, और बाकी सारे मसाले डालिये और उपरोक्त तरीके से  चटनी तैयार कर लीजिये.

सुझाव:

मोमोज के भरावन मेंबन्द गोभी और गाजर मुख्य सब्जी हैं,  अपने अनुसार सब्जी, कम ज्यादा कर सकते हैं, जो सब्जी नहीं पसन्द हो उसे छोड़ा जा सकता है.  स्पेशल मोमोज के लिये भरावन में पनीर कद्दूकस करके डालिये, पनीर मोमोज बहुत ही स्वादिष्ट बनती हैं.

      You can go to any household utensils shop and ask for a Stainless Steel Vegetable steamer. It is normally a three tier vessel with glass lid. I recommend Vinod Stainless Steel brand. I am using it and am happy with it.

    To give te momos a non veg taste ... one can mix soyabeens with all the vegetables.... pehle aap soyabin ki badiyo ko halke garam pani me bhigo le(soft hone tak) aur fir baad me pani nichor ke mixi me usko achi tarah pees le...n fry it with all the vegetables...plus u can add ajina motto,soya sause and vinegar..

    nisha ji momos mene delhi me hi khaye hai or khub khaye hai, actually meri city kota me momos nahi milte so kai baar momos ko miss karta hu,ek do baar banane ki koshish ki per bana nahi paya , aapki recipe padne ke baad lag raha hai ki perfect momos bana lunga, but aapki chatni ki recipe se lag raha hai ki bahut teekhi chatni nahi ban paegi jo ki momos ke test ke liye bahut jaruri hai pls suggest recipe for teekhi chatni

    Maine momos try kiye par woh bahut dry bane. Bazar ke momos kaphi moist hote hain.Iska kya karan ho sakta hain? aur momos jyada safed bhi nahi, infact bhure dikh rahe the. Please aap bataye iske kya karan ho sakte hain? Thanks a lot!

    Hello,
    iread ur recipe and made veg momos last night but it took around 20 minutes to cook.i have a separate complete set to make momos .and also they were thick,not cooked properlya nd were sticking from belwo and stuff coming out from bottom.please tell me what to do next time to make best momos.

    निशा: क्योंकि इन्हें भाप में पकाना होता है. भाप न मिलने पर मोमोज एकदम सख्त हो जाती हैं. वैसे आजकल माइक्रोवेव के लिये भाप में पकाने का अटैचमेन्ट भी आता है. यदि आपके पास यह उपलब्ध हो तो इसे माइक्रोवेव में भी पका सकते हैं

    this is not a perfect recipe for momos .and momos is not only tibetan food in nepal its a delicious food and very popular.and your recipe for achar is not a perfect for momos ..its just achar for momos you need extra ingredients and extra method ...this is incomplete article

    i tried out ur recipe of momos and it really turned out very well but the chatni shudv been different...my family enjoyed it...the steps were very clear and understandable..just one question?...how does it become a little softer?...
